Purple sweet potato leaf extract (Ipomoea batatas L.) Antin 3 variety contains flavonoids and polyphenols. Its potential to be used as an antioxidant nutraceutical. The effervescent granules increase the solubility and provide a pleasant taste. There are two formulas with different types of binders, namely PVP 5% (F1) and CMC Na 1.5% (F2), using citric acid: tartaric acid: Na Bicarbonate in a ratio of 1:2:3. The wet granulation method was chosen using 70% ethanol as a solvent. The evaluation tests carried out were organoleptic, particle size distribution, flow rate, angle of repose, cars index, compressibility index, dispersion time, humidity, pH and hedonic. The evaluation results obtained were that F1 gave a bright yellow color while F2 had a dull green color, both of them had a extract aroma and a sweet- fresh taste. F1 and F2 have a 1 % moisture content, good flow properties, and <10 % of fines value. The dispersion time of F1 is longer and the foam height is lower than F2. The pH value of F1 is 4.8 and F2 is 5.1. The results of the hedonic test F1:F2 for color, aroma and taste respectively were (101: 90), (94:80), (80:77).F1 was more preferable than F2.
